French oyster from Marennes d'Oléron nº2 with Champagne granita, shallots, mint and lemon.
Cut of duck foie mi-cuit a l'Armagnac with puff pastry.
Both dishes are paired with champagne, Fleur de craie de Bolieu. Chardonnay
Fresh grilled scallop, beurre blanc sauce.
Accompanied with white wine from Anjou, Dumnacus Chenin Blanc 2023.
Main course of choice:
Grilled turbot in green sauce with clams.
Languedoc white wine, Domaine Aupilhac Cuvée 2023. Ugni Blanc, Grenache Blanc, Clairette, rolle, roussane and marsanne.
Grilled duck magret, cherry chutney, tamarind bordelaise sauce.
Red wine from Corbières (France), La Désyrahble 2021. Syrah and Grenache.

Canele lightly drunk with Martinique rum filled with pastry cream with Tahitian vanilla, orange and raspberry coulis.
