Artichoke, broad beans, cauliflower and grated truffle served with fine Iberian ham consommé.
Paired with a dry white wine from Alsace, Riesling Les éléments 2020 from Bott Geyl.
Main courses:
Grilled national turbot fillet, vanilla infused celeriac purée, fresh spinach leaves with shallot and truffle sticks.
Paired with a light red wine from Ribeiro, Tinto do demo 2020 from adega do Demo.
Beef sirloin cooked on firewood, sautéed salsify, creamy anchovy and truffle sauce, smooth veal sauce.
Served with a red wine from Ribera del Duero, Fuentenebro 2021.

Mochi with chocolate and truffle ganache, salted peanut toffee.
